Learn how to make basic Varan / Dal and also other types of dal from our chef Archana on Ruchkar Mejwani Basic Cooking. <br /> <br />Ingredients: <br /> <br />For Basic Dal / Varan <br />250 gms Tur Dal <br />Water <br />1/2 tsp Hing <br />1/2 tsp Turmeric Powder <br />Sugar <br />Salt to taste <br /> <br />For Ambat Varan <br />2-3 tsp Oil <br />1 tsp Cumin Seeds <br />1 tsp Mustard Seeds <br />10-12 Curry Leaves <br />2-3 Green Chillies <br />1 Tomato chopped <br />Coriander leaves <br />Tur Dal, cooked <br />3-4 Kokam <br />1/2 tsp Sugar <br />Salt to taste <br />Water <br /> <br />For Spicy Varan <br />2 tbsp Oil <br />1 tsp Cumin Seeds <br />1 tsp Mustard Seeds <br />1 tbsp Ginger Garlic Crush <br />10-12 Curry Leaves <br />1 Onion, chopped <br />1 tbsp Jaggery <br />Coriander Leaves <br />1 tbsp Grated Coconut <br />1 tbsp Mix Masala <br />Salt to taste <br />Water <br />Tur Dal, cooked <br /> <br />Method: <br /> <br />To make basic varan: <br />- In a pressure cooker add tur dal & water. <br />- Then add hing & turmeric powder. Let the dal cook on 3-4 whistles. <br />- Once the dal is cooked add little water and churn well. <br />- Add sugar and again mix well. <br />- Let the dal boil in slow flame. <br />- Basic varan is ready. Serve it with a dollop of ghee. <br /> <br />To make ambat varan: <br />- Pressure cook the tur dal and keep it aside. <br />- In a pan heat some oil. <br />- Add cumin seeds, mustard seeds, curry leaves, green chillies, coriander leaves & chopped tomato. Saute everything well. <br />- Add pressure cooked tur dal, kokam, sugar & salt. Mix well. <br />- Add water and let the dal boil for some time. <br />- Garnish with coriander leaves and serve. <br /> <br />To make spicy varan: <br />- Pressure cook the tur dal and keep it aside. <br />- In a pan heat some oil. <br />- Add mustard seeds, cumin seeds, ginger garlic crush, curry leaves, chopped onion, mix masala, jaggery, coriander leaves, grated coconut & salt. Saute everything well. <br />- Add little water and let the onions cook. <br />- Add pressure cooked tur dal and mix well. <br />- Add water and let the dal boil for some time. <br />- Garnish with coriander leaves and serve.
